It's a restaurant in a taco truck. Thus the "bistro" part. Not your typical taco truck menu. (See menu photos) I can't tell you much about the food as well ordered only 1 plate.....the "Primetime Ribeye Taco plate". Well, the meat was extremely tender. It was almost like it was beef stew. It was moist like it had been stewing in gravy for hours. Not sublime, but it tasted ok. I was more expecting a charred steak cut up rather than stewed. The rice was also ok. It was white rice the kind that sticks to your ribs and the spoon.....even upside down. As a guerro from NY, I actually prefer it to Mexican rice. The salsa was delicious, not too pica. Again, this guerro can't handle anything too hot and I think it takes away from the flavor of the dish if all you get is "heat". This salsa was spot on. The lime slices were big and juicy, not those mini half circle dry ones. The picnic tables were clean and comfortable, but the loud music, busy traffic and hot sun made the atmosphere hard to bear. Well, i had to try it once, but not sure if I will be back. The prices are a bit steep for me. Although, I might pay that overly high price for a top notch burger. I think,

The burgers and servings size are very filling and deli !!! They’re very attentive to your specifications, and the customer service is excellent!!!

Food is delicious here. We tried the Ahi Tuna Burger , the Grilled Salmon Tacos and Ribeye loaded Nachos. AMAZING 😋🤤 and..... SERVICE IS ON POINT👏🏻 🙌🏻 👌🏻 ❤️ Congratulations 🙌🏻

Chef Lou Rocks! My friends and I were in town from Vegas and looking for local food. We tried Livi’s Mexicue but they were closed for the day due to an appliance problem. We were sent over to LaBistro and it did not disappoint. I had the steak tacos and they were amazing. The Oaxaca cheese on them put it over the top. The meat was seasoned so well and cooked to perfection. 10/10 recommend would definitely go back.

Hands down one of the best food trucks in Laredo. The burger was delicious and fully loaded. I was a lil skeptical with the tacos but they ended up being better than most of the Mexican places I tried on my last trip 3 weeks in Laredo (Mexican born)
